Cajun pork stir-fry

Cajun pork stir-fryingredients
  • 750 g/1 ½ lb pork fillet, trimmed of all visible fat
  • 1 clove garlic, crushed
  • 2 tablespoons paprika
  • 2 tablespoons ground cumin
  • 2 teaspoons dried thyme
  • 2 teaspoons dried ground oregano
  • 2 teaspoons crushed black peppercorns
  • 2 teaspoons vegetable oil
  • 2 onions, chopped
  • 440 g/14 oz canned sweet corn kernels, drained
  • ½ cup/125 ml/4 fl oz tomato juice

method

  • Cut pork diagonally into thin slices. Please garlic, paprika, cumin, thyme, oregano and black peppercorns in a bowl and mix to combine. Add pork and toss to coat.
  • Heat oil in a wok over a high heat, add onions and stir-fry for 3 minutes or until soft. Add pork mixtute and stir-fry for 3 minutes or until pork is brown. Add sweet corn and tomato juice to wok and simmer for 3 minutes or until heated through.

Meat is aesier to slice if it is partially frozen. To achieve thin slices of pork, wrap in plastic food wrap, place in the freezer for 15-30 minutes or until firm, then slice using a very sharp knife.
